The Best Vegan Chocolate Chip Cookies

These vegan chocolate chip cookies are so delicious. They are a healthier twist on a classic recipe. When I was younger, I used to always take these cookies to school on my birthday, everyone loved them and they couldn’t tell that they were vegan. This recipe is a great alternative for an unhealthy dessert.

Ingredients

  • ⅔ cup coconut oil (melted)
  • ⅔ cup granulated cane sugar
  • ⅔ cup organic brown sugar (packed)
  • ½ cup unsweetened vanilla almond milk (silk)
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups vegan semi sweet chocolate chips (trader joe’s)

Steps

  1. Preheat oven to 350°F.
  2. In large bowl, mix coconut oil, cane sugar and organic brown sugar until well combined.
  3. Slowly add in the almond milk.
  4. Add vanilla extract
  5. Stir in the flour, baking soda, baking powder and salt until dough forms.
  6. Add in chocolate chips.
  7. Scoop tablespoons of dough onto a cookie sheet about 1 inch apart.
  8. Bake for 11 to 14 minutes

* Cool for 1 minute on cookie sheets. Transfer to cooling rack and cool completely. Store in an air tight container for maximum freshness.

*Serve with vanilla ice cream for a delicious hot and cold dessert
