These vegan chocolate chip cookies are so delicious. They are a healthier twist on a classic recipe. When I was younger, I used to always take these cookies to school on my birthday, everyone loved them and they couldn’t tell that they were vegan. This recipe is a great alternative for an unhealthy dessert.

Ingredients
- ⅔ cup coconut oil (melted)
- ⅔ cup granulated cane sugar
- ⅔ cup organic brown sugar (packed)
- ½ cup unsweetened vanilla almond milk (silk)
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cups vegan semi sweet chocolate chips (trader joe’s)
Steps
- Preheat oven to 350°F.
- In large bowl, mix coconut oil, cane sugar and organic brown sugar until well combined.
- Slowly add in the almond milk.
- Add vanilla extract
- Stir in the flour, baking soda, baking powder and salt until dough forms.
- Add in chocolate chips.
- Scoop tablespoons of dough onto a cookie sheet about 1 inch apart.
- Bake for 11 to 14 minutes
* Cool for 1 minute on cookie sheets. Transfer to cooling rack and cool completely. Store in an air tight container for maximum freshness.
*Serve with vanilla ice cream for a delicious hot and cold dessert
