Amazing Cilantro Fried Rice

If you are hungry and want a fast and healthy home cooked meal, you can enjoy this quick and easy cilantro friend rice. My mom makes this for my family when she need a quick, but healthy recipe.

Ingredients

  1. 1 cup rice (brown or white)
  2. 1 16 oz container of firm tofu
  3. ¼ bunch of cilantro
  4. 1 bunch of spring onions (chopped)
  5. 1 tbsp chili oil (optional)
  6. 1 tsp ground black pepper
  7. 1 tsp salt
  8. 2 eggs (optional)
  9. Lime juice (2 tsp)
  10. Sesame oil

Steps

  1. Cook rice- Bring 2 cups of water to a boil (pinch of salt), add cleaned rice and cook for 8 – 10 min.
  2. In a wok heat oil and saute onions, and tofu , add salt and pepper for taste
  3. Add cooked rice and cilantro (keep some for topping) mix until well combined
  4. Add chili oil, mix until well combined (optional)
  5. Scramble 2 eggs and add into rice (optional)
  6. Serve warm with cilantro topping and lime juice.
