If you are hungry and want a fast and healthy home cooked meal, you can enjoy this quick and easy cilantro friend rice. My mom makes this for my family when she need a quick, but healthy recipe.

Ingredients
- 1 cup rice (brown or white)
- 1 16 oz container of firm tofu
- ¼ bunch of cilantro
- 1 bunch of spring onions (chopped)
- 1 tbsp chili oil (optional)
- 1 tsp ground black pepper
- 1 tsp salt
- 2 eggs (optional)
- Lime juice (2 tsp)
- Sesame oil
Steps
- Cook rice- Bring 2 cups of water to a boil (pinch of salt), add cleaned rice and cook for 8 – 10 min.
- In a wok heat oil and saute onions, and tofu , add salt and pepper for taste
- Add cooked rice and cilantro (keep some for topping) mix until well combined
- Add chili oil, mix until well combined (optional)
- Scramble 2 eggs and add into rice (optional)
- Serve warm with cilantro topping and lime juice.
